Fluffiest Carrot Cake 🥕

Ingredients:

Grated carrots……………………………………………1 cup

Hazel or any chopped nuts……………………….as preferred

All purpose Flour………………………………………1.5 cups

Brown sugar………………………………………………1 cup

White sugar……………………………………………….0.5 cup

Baking powder…………………………………………..1 tsp

Baking soda……………………………………………….0.5 tsp

Cinnamon powder…………………………………….1 tbsp

Salt……………………………………………………………..0.5 tsp

Eggs…………………………………………………………….3 nos

Vegetable oil………………………………………………1 cup

Vanilla essence………………………………………….1 tsp

Orange food color……………………………………..2 drops

Greek yogurt……………………………………………..5 tbsp

Method:

  • Beat the eggs until fluffy.
  • Mix together the eggs, vanilla essence, Food color, sugar, Greek yogurt and oil.
  • In another bowl Sieve flour, baking powder, baking soda, cinnamon powder and salt.
  • Add the dry ingredients mix one spoon at a time to the wet ingredients mix.
  • Mix until no lumps are seen.
  • Fold the nuts and carrots into the batter.
  • Bake at 180° for 40-45 minutes

And that’s it! Your Fluffy Carrot cake is ready to be served. One weird tip here. I like adding Greek yogurt for the topping because it balances the sweetness of the cake. I don’t have a sweet tooth 😬
But you can use cream cheese. Enjoy!
